Ingredients:
- 1 1/2 cup all purpose flour
- 1/2 cup cornmeal
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup sugar
- 1 1/2 to 2 cup shredded cheddar cheese
- 1 egg, beaten
- 1 stick butter, melted
- 1 cup milk
- 1/4 tsp. vanilla
- Preheat oven to 400°F.
- Mix dry ingredients together in medium bowl, then add cheese and mix. In a separate bowl, mix egg, butter, milk and vanilla together. Add this to the flour and cheese mixture and stir together. Spoon into greased muffin tins and bake for 15-20 minutes.
Yields about 18 muffins.
These are great with BBQ or chili.
