Cheddar cheese corn muffins

Ingredients:
  • 1 1/2 cup all purpose flour
  • 1/2 cup cornmeal
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1 1/2 to 2 cup shredded cheddar cheese
  • 1 egg, beaten
  • 1 stick butter, melted
  • 1 cup milk
  • 1/4 tsp. vanilla
Directions:
  1. Preheat oven to 400°F.
  2. Mix dry ingredients together in medium bowl, then add cheese and mix. In a separate bowl, mix egg, butter, milk and vanilla together. Add this to the flour and cheese mixture and stir together. Spoon into greased muffin tins and bake for 15-20 minutes.
Yields about 18 muffins.

These are great with BBQ or chili.

  1. If you like it more cheesy, add 1/2 cup cheddar cheese.
